The Nakagawa White Steel (White 3) Honyaki is a more practical line of Honyaki knives. While we all LOVE everything to be as exotic as possbile: steel has to be White 1 or Blue 1, and has to be mizu-honykai. Fact is, not only it is very difficult to forge and sharpen (hence expensive), it is also quite a bit more delicate compared to the White 3 Abura (oil) Honyaki. For Honyaki, it is naturally harder than the usual Kasumi counterpart. For example a White 2 honyaki will be 1 or 2 HRC harder than a White 2 Kasumi knife. As a result, a White 3 Honyaki is similar to White 2 Kasumi, which makes the White 3 Honyaki an excellent practical daily cutter.

After the retirement of legendary master craftsman Kenichi Shiraki, Nakagawa-san, as Shiraki-san's disciple for almost 20 years, is heading the Shiraki Hamono (now as Nakagawa Hamono). In fact, many of Shiraki-san's works including honyaki in the last 5 or more years were done by Nakagawa-san. Nakagawa-san is also forging knives for some top tier lines from Sakai retailers, namely Sakai Kikumori, Sakai Jikko, and some other brands. So K&S now is very pleased and honored to carry the latest works from Nakagawa-san, primarily in Ginsan steel with featured wide bevel, followed by more profiles and various steels in the near future.
